BRIAN YOON

OWNER-CHEF OF HOOKED ON SUSHI

Its not every day that chefs are presented with the opportunity to exercise their dreams of owning their own restaurant. Brian's journey as a chef dates back to 2006 when he first was offered the position of sushi chef at the Japanese restaurant he worked for. He was young and eager to learn a form of art that requires a vast (or lifetime) supply of patience. Luckily for Brian, he has and still possesses an unfathomable amount of patience. 

With over 12 years of experience as a chef, Brian's philosophy in the importance of providing quality food has not changed. To this day he still takes the lead when it comes to deciding on vendors and when it comes to the ingredients we purchase. Brian plays the biggest part in the Company's ability to maintain and provide quality food.

THE H.O.S.TORY


Hooked on Sushi was a mom-and-pop shop originally founded by an older couple. The owners decided to sell within a year of opening. 

The restaurant was sold to us, the current owners, in December of 2009. We remember exactly how we felt minutes before we opened for business on December 21, 2009. It was a concoction made up of big dreams, small expectations, nervousness, faith and a dire need of a fairy godmother. 

The restaurant slowly picked up momentum through the hard work each team member put into the organization. The restaurant was able to connect to its customers and build  great relationships. The loyal customers began to bring their family, friends, and acquaintances and popularity spread like wildfire. It was not long until we had a chain of customers who were hooked on sushi and a line out the door.

Through the hard work and dedication of the Hooked on Sushi Team, we have built and continue to build great relationships- whether it be our customers, vendors and partners. 

Every day we open for business is another game day. We prepare to greet the customers with similar butterflies that we felt the first day we opened. Bigger dreams, bigger expectations, confidence, faith and a firm belief that our hard work always pays off.

CARLOS GOMEZ

EXECUTIVE CHEF CARLSBAD

Meet Hooked on Sushi Carlsbad Executive Chef Carlos Gomez. Chef Carlos is the mastermind behind some of our customer's favorite rolls such as the Hooked on Sushi Roll and Mexican's Gone Wild Roll. With over 18 years of sushi experience, Chef Carlos brings his "Mr. Miyagi" like expertise to our restaurant. Chef Carlos enjoys integrating non-traditional sushi items such as cilantro and lime with more traditional ingredients such as maguro and aji. Chef Carlos is meticulous in his work of art, and is devoted to providing good quality products to our customers.

Meet Hooked on Sushi Carlsbad Executive Kitchen Chef Juan Castillo AKA "Maestro". You may have gotten a kick out the Garlic-Lemon Edamame. But did you know, that Chef Juan is the creator and preparer of the dish? Chef Juan is also the reason why the ponzu sauce and teriyaki sauce taste different and more delicious than any other restaurant. Chef Juan is dedicated to ensuring that all kitchen items such as the Chicken Katsu Curry and Yakisoba are flavorful and beautiful. He takes pride in his work of art by the empty dishes that are returned to the kitchen. As a man of a very few words, his tastebuds and cleanliness are his greatest attribution to the organization.

DANIEL CABRERA

EXECUTIVE CHEF ENCINITAS

Meet Hooked on Sushi Encinitas Executive Chef Daniel Cabrera! Chef Daniel is one of the founding members of Hooked on Sushi. Chef Daniel was taught by Owner-Chef Brian. With over 6 years of sushi experience, Chef Daniel is "sensei" (teacher) to our Junior Chefs, and "NFL fanatic" to our customers. If you want to strike a conversation with Chef Daniel, ask him about his tattoos. Chef Daniel brings to our organization a bright and ambitious personality with the desire to push through and provide a work of art that each customer can deliciously enjoy.
